Lasagna ~ Fleck Family Recipe

I've tried many lasagna recipes (frozen, other peoples, & this one) and this one takes the cake.  It's full of spices and flavor.

Recipe for:  Lasagna 

Ingredients:
1 lb. hamburger
Lasagna Ingredients
1/8 tsp. garlic powder
1 tsp. basil
1 tsp. salt
1 C tomatoes (diced Italian)
1 - 15 oz can tomato paste
1 C cottage cheese
1 beaten egg
1 Tbsp. parsley flakes
1/4 tsp. pepper
1/4 cup Parmesan (shredded or grated)
8 oz mozzarella cheese
5 oz (6 precooked) lasagna noodles

Directions:
  • In frying pan, brown hamburger and drain.
  • Add all ingredients except lasagna noodles to browned hamburger and let simmer for 15 minutes.  Make sure you put the egg in last and mix in right away so it doesn't cook up.
  • In a 8x8x2.25 baking dish, layer ingredients:
    • 2 noodles
    • hamburger mix
    • mozzarella cheese
    • repeat 2 more times.  You will have a full pan of lasagna to bake and eat!
Lasagnas Ready!

Bake at 375 degrees covered for 30 minutes.  Uncovered for 15 minutes.
Time to eat!

Weekly Menu 9/7 - 9/13


Wow, this week flew by.  Here's the menu from last week.

Sunday is carry over from last week (things change as this was not planned, I needed a break from the kitchen!

Sunday 9/7
  • Lunch - Went out to lunch at a new Mexican Restaurant, it was delicious!
  • Supper - Leftovers from lunch

Monday 9/8 -  Pork tenderloin & boxed cheesy potatoes (Mom's                              pick)
    New #1321 Pampered Chef Stoneware Deep Covered Baker Cranberry, No Box
  • Pork tenderloin was seasoned with the following: lemon pepper seasoning, garlic salt mix & seasoning salt.  This was laid on top of a sliced up sweet Vidalia Onion and cooked in the microwave in my Pampered Chef Deep Dish Baker for 25 minutes. YUM!!!  
Tuesday 9/9 - Waffles & eggs (Kid pick)

Wednesday 9/10 -  Leftovers: Sandwiches or leftovers from last     week. Still a couple of things left from last week. 

Thursday 9/11 - Leftovers: Pork Tenderloin, just as good the           second time around, YUM, again!!!

Friday 9/12 -  Homemade pizza (Everyone pick)
  • Thought this would be fun to do with the kids.  Trying to use up food already in the cabinets.  Found 3 bags of pizza dough we need to use/make.  Bought every ones favorite pizza toppings  so we are ready to go.  
Saturday 9/13 - 
  • Lunch - It's the weekend everyone found something to eat today!  Scrounge the fridge, have some cereal whatever.  This mama is not cooking!
  • Supper -  Sandwiches 

Sunday 9/14 - 
  • Lunch - Leftovers again!
  • Supper - Mom and kids went to Arby's (Mom Pick); Dad had softball, took care of himself.  Since, he knew I wasn't cooking supper tonight.

Busy Times!


School has started back 
up for my kiddos and I'm back to work after enjoying the summer with my kids.  Summer was very relaxing, now the schedule is getting busy again with every ones after school Fall activities.  My point is that's why I haven't been posting much on my blog.  It's because of my Many Joys! that are keeping me busy, running them here and there and everywhere.  Hopefully I'll get something written up soon.  I have lots of posts in the works just need to finish them up.  
Now that I'm back to work for the school year I can't stay up until midnight, need to get to bed at a decent time so I'm not dragging all day.  I did just get done reading a couple books and I'm on a smoothie kick so watch for those post coming soon!



With the kids all back to school during the day you would think I could get more done.  But the days seem to fly by on me and the lists grow and grow.  I'm very involved in my kids school PTA, along with being a Religious Ed teacher once a week and planing for that and all the household duties that come along and taking care of my children.  There are many balls to juggle and life gets crazy!  I just need to keep telling myself to focus and do one thing at a time.  It will all get done when it gets done!

What's for Dinner?!?! (9/1 - 9/7)

This is the 2nd week of everyone picking something out for the supper menu.  Here's what we've come up with for the week:

Everyone is off to school and work during the week so don't need to worry about lunches too much.



Supper ideas this week:

Monday (Labor Day) Lunch - MOM Pick from last week:  

  • French Toast & Eggs
It was a hit with everyone.  (We had french toast from last week since the left overs piled up in the fridge. Need to eat those up before making another meal.)  Need to make sure we work in the left of days throughout the week.

Monday (Labor Day) Supper - MOM Pick

  • Large pizza from Papa Murphy's
Can't go wrong there, since someone else put it together and they put tons of toppings on the pizza.  We did have to bake it but that's no problem!
Tuesday - Kid pick: 

  • V's Manicotti (http://vsitalianfoods.com/) and homemade garlic bread with side salad! 
Family Of SaucesBaked Specialties Last week we had frozen store bought garlic bread.  This week we bought fresh bread from SAM'S bakery and are going to prep it ourselves.  We had samples of it the other day all doctored up at SAM'S and my daughter just had to have it.  I do admit it was 
pretty darn good!
Wednesday -  DAD pick:  

  • BBQ Chicken Tacos 
Frozen Pampered Chef dinner I made awhile back at a dinner's done freezer meals workshop.
Thursday - Leftover night!

Friday - MOM Pick:  
  • Garlic Bread Meatball Subs
This is another recipe I made at the dinner's done freezer meal workshop. Although, we ate them 3 weeks ago.  They were a big a hit so we are having them again.   (The kids ended up having corn dogs because sleepovers were happening.  My hubby and I found something else to eat as well.)
Saturday - Lunch:  More left overs!

Saturday - Supper:  Another sleepover night; I made spaghetti for the kids and my hubby and I had leftovers yet again.

Sunday - Lunch:  Out to eat at a new Mexican Restaurant in town.  Delicious!

I Did It & So Can You!

Tuesday's workout almost didn't happen.  It started out by having to wait for the air conditioner guy to show up and fix our AC.  I missed my favorite class at the gym, because he showed up at 9:00am which is when the class starts.   After he left I was in my kitchen and heard some dripping went into the other room and saw where it was dripping from.  Immediately ran upstairs and turned off the AC again to figure out where it was coming from.  The floor was pretty wet already but it ended up just being a tube that wasn't put back into the drain pipe.  I put it back in and that took care of that.  Just glad I didn't leave and go to the gym right after the AC guy left or I would of come back to a watery mess!

Finally, made it to the gym and back before my girls got home.  I was short on time so had to kick it into high gear.  45 minute workout, here's what I did:

Elliptical ~
  • 10:15 minutes
  • 1 mile
  • 133 calories burned!
Since I missed my power class which works pretty much your whole body but we do a lot of arms each time.  That's what I did, ARMS!

Wednesday's workout

My husband was out of town, so I was in charge of taking my son to soccer practice (he's the assistant coach, so he takes him to practice most the time).  I wasn't planning on working out today but when I had to take my son to soccer practice, I got the crazy idea to take our dog with us and take her for a run/walk.  My run/walks are normally 2 - 2 1/2 miles but this one ended up being a tad bit farther. I have to say that it was rather hot out at 7 pm and my dog at one point sat down, she was ready to be done.  We were starting to go up a hill at that point so we walked up it.  I was planning on doing that already but she let me know we were going to walk for sure.  The next time I say lets go for a run she may turn around and hide.  I love this picture and am ready for this burst of summer heat to cool off for fall.

Thursday's workout

Today I went to check out a new gym.  I got a Gold's Gym flier in the mail the other day and decided to check it out!  Almost didn't make it to the gym today either.  Had to run an errand first thing and of course it took longer than planned.  Got back to town in time for a lunch date I had with a friend.  Ended up wearing my workout clothes when I left the house so went to Gold's Gym after lunch.  I know you're supposed to wait a while before working out but sometimes the best laid plans just don't happen.  Now the decision of staying at the gym I currently go to or switching over to Gold's Gym.  There are pros and con's to both, need to chart them out and decide before the special at Gold's Gym is over at the end of August.

Cardio

Elliptical ~ 1.38 miles, 13 minutes & 112 calories burned!
Stationary Bike ~ 4.60 miles, 10 minutes & 127 calories burned!

Weights

Glute machine  ~ 3 x 15 - 70 lbs
Hip Abductor ~ 3 x 15 - 145 lbs
Assisted Dip ~ 1x15 - 50 lbs; 1x15 - 60 lbs & 1x15 - 70 lbs

ABS

25 crunches

Stretch & DONE!

Got home from the gym and hopped in the pool. It felt great!  
Set the time for 20 minutes.
Swam 10 laps and stopped to see how much time was left, I found out I didn't start the timer.  Well call that the warm up.
Started the timer...swam 66 laps in 20 mins.  Grand total 76 laps!
